Salad in a jar please!
I am a huge salad fan when they are filled with a variety of things. I really enjoy when salads are full of different textures and flavours and create bursts of flavour in my mouth (or else the truth is they can be pretty boring otherwise). So, I have created a salad that I truly love and think is filled with bursts of flavour! This salad is super delicious (and nutritious) and incorporates pomegranates, which is a winter fruit favourite of mine. Oh ya...and it's in a mason jar too, so it's super cute!
Ingredients:
3/4 cup canned black beans (or kidney beans), drained and rinsed
3/4 cup cooked quinoa (tip: I like to cook mine using broth for more flavour)
1/2 cooked sweet potato (tip: to save time, pierce the potato all over with a fork and cook for 8-10 minutes in the microwave)
1/4 cup red onion, diced
1/3 cup pomegranate seeds
1/4 cup pumpkin seeds
2 cups spinach
Dressing:
1 and 1/2 tbsp. olive oil
3 tbsp. apple cider vinegar
1 garlic clove, minced
salt and black pepper to taste
Directions:
Mix dressing ingredients together and let sit
Layer ingredients into the mason jar
Start with black beans, quinoa, then add the dressing, red onion, sweet potato, pumpkin seeds, pomegranate seeds and top with the spinach
When ready to eat, empty contents into a bowl and enjoy! :)
