Hearty Homemade Soup!
There is nothing I love more than soup! If you know me you know it's my ultimate comfort food. It also is the absolute perfect meal on a cold winter day.
Recently, I came across this soup mix at Walmart, called the great value soup mix and I love it! It contains yellow split peas, rice, barely, green split peas, and red lentils. It is extremely nutritious, being high in fibre and protein. In addition, it is easy to use, cheap, and a great addition to any soup combo.
The back of the bag has a simple soup recipe, which I have modified to suit my soup preferences and include extra veggies and protein.

This recipe can easily serve 6-8...if not more. I like to make a huge patch so I freeze some or have lots of leftovers for lunches!
Ingredients:
8 cups chicken or vegetable broth (no salt added or homemade)
4-500 g ground turkey or chicken
3 large carrots, peeled and diced
1 large onion, diced
1 tbsp. vegetable oil
1 1/2 cups great value soup mix
1 can, diced tomatoes
2 yams, diced (optional)
Spices (I use salt, black pepper, oregano, rosemary, and chili flakes - but you can use whatever you like)
Directions:
In a large pot on medium high heat, add vegetable oil and begin to sauté ground turkey. During this time add some spices of choice (e.g. garlic powder, black pepper, and salt). Add one onion and continue to sauté until meat is browned.
Add diced carrots, soup mix, diced tomatoes, diced yams and spices of choice. Cover with broth. Mix together and bring to a light boil. Let the mix boil lightly for 3-4 minutes.
Bring heat down to low and simmer for 2 hours.
