Spring is in the air!

I don't know about you, but I am loving the spring air. One of the reasons I love living in Canada is because we get to experience season changes, there is something so magical about each of the seasons. However, there is something extra special about the spring, we see more sunshine, we get out more and I tend to feel more energized. It is wonderful to come home in the evenings to a sunny living room!

The first day of spring got me thinking about how the seasons change my food habits and how there are foods I truly look forward to in every season.

Spring:

In the spring, I look forward to rhubarb. I love using fresh rhubarb in baking (and I love to bake). This spring I look forward to testing out some new rhubarb recipes (stay tuned). My other go to spring food is pesto, I like the fresh taste and the brightness of it. Both the fresh herbs and bright colours make me think of spring. I love using pesto sauce for pasta or even on a homemade pizza.

Below is a picture of a strawberry rhubarb crumble I made last spring (can't wait to make this again and many other nutritious and delicious treats!)

Summer:

When I think of summer I automatically think of cherries! Cherries are one of my favourite fruits, but only something I usually enjoy over the summer months. I also think of BBQ salmon, there is something about the simplicity of barbecuing salmon with some fresh vegetables and herbs.

Lastly, summer makes me think about ice cream. If you don't know me you should know that ice cream is my FAVOURITE sweet treat. There is just something great about enjoying a cold ice cream on a warm summer evening! (ps. my all time favourite is chocolate chip cookie dough)!

Below is a picture of a barbecued salmon I enjoyed last summer. It was grilled with fresh herbs, onion, and lemons.

Fall:

In the fall I become pumpkin and squash obsessed. There is something about the changing leaf colours and crisp air that makes me want squash and pumpkins (they are also in season, which is a bonus). I love making pasta with squash, any type of baked good with pumpkin (muffins, cookies, scones - you name it, I'm trying it!)

The image below is a stuffed acorn squash I made ( it is stuffed with cheese, spicy sausage meat, spinach, mushrooms and onions - delicious)!

Winter:

In the winter I love to make soups. Soup is my ultimate comfort food and one of my favourite dishes. There is nothing better than a warm and hearty bowl of soup on a cold winter day. My other winter favourites are roasted chestnuts and pomegranates. I am way too excited around the holidays, when I finally find both fresh chestnuts and pomegranates in my local grocery stores.

Spring is a time of growth and rejuvenation. It is also the season where our local Ontario produce is beginning to grow. One of my favourite things about the spring is the potential for growth (both for food, but also on a personal level).

This year I have already planted a few herbs and I am looking forward to more planting!
