Spring Spinach Salad
One of my favourite things about the spring and summer months in Canada is the abundance of fresh local produce in Ontario. I am extra excited because come May Ontario spinach is available. I am a major spinach lover (sorry Kale, it's not you it's me) and I am also a huge strawberry fan (available come May as well). In fact, I have already seen some Ontario strawberries in stores! What's even better is the fact that spinach and strawberries taste fantastic together!
This morning I did a segment on Daytime York Region which featured this delicious spinach salad. It is full of fibre, antioxidants, iron, protein and healthy fats! It is also a great way to use local Ontario grown ingredients. Give it a try and let me know what you think.
Ingredients:
- 2 cups fresh spinach
-1/2 cup cooked quinoa
-1/2 cup lentils (canned and drained)
- 3/4 cup diced strawberries
- 1/4 cup roasted slivered almonds
- 2-3 tbsp. goat cheese
Dressing:
- 1 tbsp. olive oil
- 1 tsp. honey
- 1 tsp. dijon mustard
- 1.5 tbsp. balsamic vinegar
- Salt/black pepper to taste
Directions:
Mix together dressing ingredients (can be done the night prior) and let sit.
Mix together spinach, quinoa, lentils, strawberries, almonds, and goat cheese. When ready add dressing and mix together well.
It's that simple. Enjoy!
