Overnight Peach Oats
I am a peach lover, so naturally this time of year in Ontario is very exciting for me. This past weekend I picked up my first basket of Niagara peaches and my mind is already swirling with recipe testing ideas.
I actually dislike really ripe fruit, except for when it comes to peaches....I love a juicy ripe peach. Over the weekend I made two different batches of overnight oats, one kind with yogurt that is stored in the fridge and one in the slow cooker. They are both delicious, but I personally love the slow cooked version. These breakfast options are a great source of fibre, which will help keep you satisfied all morning long. The best part about both these recipes is they taste like a peach pie and who can pass up dessert for breakfast?
Give these recipes a try while Ontario peaches are in season!
Slow Cooked Overnight Oats:
Serves 4-6
Ingredients:
1 1/2 cups steel cut oats
1 3/4 cups almond milk (or any milk)
1 1/2 cups diced peaches (or 3 small-medium peaches). You can also use apples.
1 tbsp. cinnamon
1 tsp. vanilla extract
2 tbsp. honey or maple syrup
1 3/4 cups water
2 heaping tbsp. ground flaxseed
1 tbsp. butter or vegetable oil
Directions:
Grease slow cooker well with some butter or vegetable oil.
Place all ingredients in slow cooker and cook for 6-8 hours overnight on low heat.
Enjoy the next morning, topped with additional fruit, shredded coconut or slivered almonds.
*Can keep well for 3 days in the fridge
Mason Jar Easy Overnight Oats:
Serves 2
Ingredients:
1/2 cup rolled oats
1/2 cup almond milk (or any milk)
1/3 cup Skyr plain yogurt
1/2 tsp. cinnamon
3/4 cup diced peaches
1/2 tsp. vanilla extract
2 tsp. honey or maple syrup (optional)
1 tsp. ground flaxseed
Directions:
Mix together in a large bowl and divide into 2 small-medium mason jars. Keep in fridge overnight and enjoy in the morning! Option to top with shredded coconut, fresh peach slices and nuts.
