Energy Boosting Spinach Salad
The new year can be a super busy time and the cold weather makes it difficult to get out of bed some mornings!
Keep yourself healthy and pack energy boosting foods in your lunch to keep you feeling your best all day long. Today I am sharing an energy salad recipe. I call this an energy salad because it's full of energy boosting foods.
Spinach - providing iron and other nutrients, that help with energy production.
Beans - provide protein, fibre, and iron, all of which help keep your blood sugar levels stable and promote good energy.
Apple - contains many vitamins and natural sugars, which can act as a mid-day 'pick me up.'
Quinoa - contains fibre, protein, iron, and magnesium, which plays an important role in converting sugar to energy in our bodies.
Serves 2
Ingredients:
4 cups, fresh spinach
1 apple, diced
½ red onion, diced
1 cup quinoa, cooked
1 cup chickpeas, cooked (can be canned and rinsed)
1 can tuna, drained
Dressing:
1 tbsp. olive oil
2-3 tbsp. apple cider vinegar
1 tbsp. lemon juice
1 tsp. garlic powder
Salt and black pepper to taste
Directions:
Cook quinoa according to package instructions and set aside
Dice red onion finely and chop apple, set aside.
Mix dressing ingredients using a small whisk and set aside.
Mix together all salad ingredients (spinach, apple, quinoa, red onion, chickpeas, and tuna). Place in container or mason jar.
Pour dressing over salad when ready to eat (stays well with dressing for 2 days).
