Lentil 'Bolognese' Raw Tomato Sauce
I must admit I do love a classic bolognese tomato sauce, but I also love incorporating more plant based meals into my routine. I am a big fan of lentils because of their meaty texture and incredible nutrient content. Lentils are an excellent source of protein, iron, and fibre.
This tomato sauce is raw, which makes it super easy and quick to make. You can even use canned lentils to save even more time.
This recipe is perfect for zoodles (zucchini noodles) or a combination of spaghetti and zoodles. Give it a try and let me know what you think.
Ingredients:
¼ cup olive oil
½ cup sun dried tomatoes
1 bell pepper, chopped
4 cloves garlic, peeled
2 -3 fresh basil leaves
1 tbsp. dried rosemary
Pepper to taste
¼ tsp. salt
2 tsp. maple syrup
1 ½ cups canned or fresh diced tomatoes
½ onion, chopped
½ tsp. cumin
2 cups cooked lentils (can be canned, drained, and rinsed)
Directions:
Add olive oil and sun dried tomatoes to a food processor and blend. Add bell pepper, garlic, basil, rosemary, salt and pepper, cumin, maple syrup, onion, and diced tomatoes to a food processor and blend until a desired consistency is reached.
Taste and adjust seasoning as needed.
Stir in lentils and enjoy over zoodles or noodles.
