Cauliflower buffalo 'wing' dip
I love appetizers, a friend of mine often brings a buffalo chicken dip to parties and I would sit there and eat way too much of it. Recently I thought this would be perfect with cauliflower. So, I tested my own slightly healthier and vegetarian version....and it's just as delicious!
Warning: this dip is irresistibility delicious!
Ingredients:
1 head cauliflower (option to use 2 if you want more of a cauliflower flavour)
2 tbsp. olive oil
3 fresh garlic cloves
Sea salt and black pepper
½ brick light cream cheese
2 cups cheddar cheese, grated
1 cup blue cheese
1 + 1/4 cup hot sauce of choice (your favourite)
3-4 green onions, sliced (for topping, optional)
Directions:
Preheat oven to 425F
Chop cauliflower and toss in olive oil. Sprinkle with some sea salt and black pepper. Bake for 30-40 minutes.
Put roasted cauliflower, cheeses, garlic, and hot sauce into slow cooker. Cook on high for 2 hours.
Mix together well. Option to use a hand emersion blender to make the consistency smoother.
Option to top with sliced green onion.
